I’m Susan, proud owner of Bay Tree, mum of three, and a retired teacher. Along with my husband, Willie, it had long been a dream for us to welcome guests to share our beautiful property and the unique village of Hillsborough. This dream was achieved in 2017 when Bay Tree opened its doors, and the journey began.  I have loved meeting my guests who come from near and far. Everyone has their story to tell, and I am honoured to have been part of making their stay memorable. At Bay Tree we want to offer our guests a touch of luxury, yet for them to feel at home and relaxed.

I am passionate about cooking and baking, and I am happiest in my kitchen preparing food for others to enjoy. Food is central to the Bay Tree experience, and I am delighted to offer a number of bespoke food packages to make the stay extra special. 

Gardening is another passion of ours, and on arrival our guests invariably comment on our expansive garden and our stunning views across the countryside.
